There are cocktails, and then there are projects. The Navy Milk Punch sits firmly in the second category — and it is absolutely worth every second of the process.

Milk punch is one of the oldest cocktail techniques in existence. The principle is this: you combine a spirit with acidic ingredients and whole milk, which causes the milk to curdle. You then filter the mixture through the curds, which act as a natural clarifying agent, stripping out the colour, removing tannins, and leaving you with a crystal-clear, velvety-textured liquid that tastes intensely of everything you put in — without looking like any of it.

Our version starts with Landlocked Navy Rum, which provides that full, robust rum backbone. Chilli Cherry Rooibos tea adds a complex, fruity, slightly spiced element that sounds unusual and works beautifully. Bitter aperitif introduces a bittersweet complexity, lime juice provides the acidity that triggers the clarification process, and 30ml of whole milk does the technical work.

The result, once filtered and pre-chilled, is a cocktail that looks like water and drinks like an experience — smooth, layered, and unlike anything a guest will have encountered. Serve it in a chilled coupe with no garnish. The clarity is the statement.

Navy Milk Punch

50ml Landlocked Navy Rum

35ml Chilli Cherry Rooibos Tea

10ml Bitter Aperitif

25ml Lime Juice

30ml Whole Milk

  • Combine all ingredients with the milk. Filter through the curds until clear.
  • Serve pre-chilled in a coupe glass.
