Pineapple Martini

Based on the horrendous "pornstar" martini but without the stupid floating fruit.

I've never been able to hide my hatred of the "pornstar" martini. A terrible name for a drink, a pointless half passion fruit getting in the way and what the hell do you so with a shot of Prosseco? However, the base martini inside it is delicious and a great recipe to play with. 

So I did and created a pineapple martini which is packed full of flavour and perfect when topped with sparkling wine. Not in a shot glass! We combine our Landlocked English Pineapple Rum with a good splash of homemade vanilla syrup and a touch of lime juice. Like a daiquiri but in different ratios creating a different beast. 

Simply shake or stir with ice and enjoy!
