The Piña Caliente starts where the Simple Piña Colada does — Landlocked Roast Pineapple Rum, cream of coconut, pineapple juice — but the decision to serve it up in a chilled coupe rather than tall over ice changes everything. It's a small shift with big consequences.
Here, the drink is about elegance rather than ease. The shake-only method (no blending here) creates a lighter, silkier texture, and the coupe glass means every sip is cold, refined, and undiluted by melting ice. The roasted pineapple character of the rum comes forward more clearly, the coconut takes on a creamier quality without the chill of crushed ice dulling it, and the whole drink sits with a kind of quiet confidence that a highball doesn't quite achieve.
The name, Piña Caliente — "hot pineapple" — is a nod to the rum itself. Landlocked Roast Pineapple is made with molasses from sugar cane and flavoured with the deep, caramelised warmth of roasted pineapple. There's a gentle heat to it, an intensity that this stripped-back serve lets breathe.
Shake hard, double strain, garnish with a single pineapple frond. This is the tropical cocktail for someone who takes their drinks seriously.
