The Story
Most Old Tom gins lean on sugar to hit that rounded, sweeter style. The Sweet Spot doesn't — it's finished with real honey from Home Farm MK during proofing, plus vanilla pods that have already done a job once before in the Landlocked Spiced Rum. Nothing wasted, everything used twice.
Round enough to sip neat, still structured enough to hold its own with a tonic — Luke's own go-to when he's in company.
How it's made
The botanicals macerate in ethanol for 24 hours before being distilled in our new 50-litre pot still: juniper berries, coriander seed, liquorice root, star anise, dried orange peel, dried elderflower, and sarsaparilla. The distillate is then steeped with vanilla pods reclaimed from the Landlocked Spiced Rum, and finished with a Home Farm MK honey syrup during proofing.
Why it's different
Most Old Toms will just use sugar. This one uses proper local honey from Home Farm MK to add the sweetness, with star anise and liquorice root in the botanical bill doing the work of building on that honeyed character rather than piling on more sugar.
