Not every pineapple cocktail needs to play it safe. The Landbird takes the tropical warmth of Landlocked Roast Pineapple Rum and gives it something to push against — a bitter aperitif that sharpens the sweetness, a squeeze of lime that cuts through the richness, and a soft hit of Demerara syrup that ties it all together.

The Landlocked Roast Pineapple Rum provides the foundation — all deep, caramelised pineapple and rum warmth — while the bitter aperitif (think Campari or a similar style) introduces a floral bitterness that transforms the profile entirely. Lime juice provides the acid backbone, Demerara brings a raw, molasses-edged sweetness, and two dashes of Angostura bitters add spice and depth to the finish.

45ml Landlocked Roast Pineapple Rum

15ml Bitter Aperitif

15ml Lime Juice

10ml Demerara Syrup

2 Dashes Angostura Bitters

  • Shake with ice.
  • Serve in a lowball glass, garnish with a pineapple frond.
