The Paper Plane is a modern classic — a drink invented in 2008 by bartender Sam Ross that became one of the most celebrated cocktails of the last two decades. The original calls for equal parts bourbon, Amaro Nonino, Aperol, and lemon juice. Our version swaps bourbon for Landlocked Spiced Rum and lime for lemon, and in doing so, turns a great cocktail into something entirely new.
The equal-parts format is deceptively simple. Every ingredient matters equally, which means nothing can hide. Landlocked Spiced Rum brings the backbone — its natural spicing and rum warmth adding a depth that plays beautifully against Amaro Nonino's bittersweet herbal complexity. Aperol adds its signature orange-bitter sweetness, while the lime juice (brighter and more citrusy than lemon) cuts through the whole thing with precision.
What you get in the glass is a cocktail with multiple layers. It's bitter, sweet, sour, and warming all at once — the kind of drink that changes with every sip depending on which flavour comes forward. The colour, a burnt amber verging on coral, matches the complexity.
Shake hard with plenty of ice and double strain into a well-chilled coupe. Garnish with a small paper plane if you're feeling theatrical. It's worth the effort.
