The Paloma, Clarified and Refined.
While most Palomas are pink and pulpy, we’ve applied our "Culinary Precision" to create a version that is as visually stunning as it is delicious. We start with a premium Blanco Tequila—offering clean, earthy agave notes—and marry it with house-clarified grapefruit and lime juices.
Through clarification, we strip away the solids to leave behind the pure, vibrant essence of the fruit. This results in a silky-smooth texture and a sharp, zesty snap without the bitterness of pith or the cloudiness of juice. Balanced with a touch of sugar syrup, this is a lean, mean, refreshing machine designed for the "Palate Purist" who demands more from their highball.
The Serve: The Paloma is built for the long serve. Fill a highball glass with plenty of ice (and a salt rim if you’re feeling bold). Pour in 100ml of the cocktail and top with a splash of soda water or sparkling grapefruit soda for extra fizz. Garnish with a fresh grapefruit wedge or a sprig of rosemary.

Why is the drink clear instead of pink?
That’s the "Culinary Precision" at work! We clarify our grapefruit and lime juices to remove the pulp and solids. You get all the bright, acidic flavour of the fresh fruit, but with a sophisticated, clear appearance and a smoother mouthfeel.
Do I need to add soda water?
While this is delicious served short over ice, a Paloma is traditionally a highball. We recommend adding a splash of soda water or a premium grapefruit soda to give it that refreshing effervescence.
How should I store the bottle?
Because this contains real clarified fruit juices, we recommend keeping it in the fridge once opened and consuming it within 2–3 weeks to ensure the citrus notes stay bright and zesty.
