The Bramble is a staple of British cocktail culture, and we’ve given it the Three Counties treatment. The soul of this drink is our Gin 17•09—a spirit born from our "Waste Not" manifesto. By redistilling the heads and tails of our rum with juniper, sarsaparilla, and fresh orange, we’ve created a gin with incredible depth that stands up boldly against the fruit.
We’ve expertly balanced the gin’s botanical punch with the deep, jammy richness of Crème de Mûre (blackberry liqueur) and a sharp hit of lemon. It’s a masterclass in "Culinary Precision"—tart, sweet, and spirited, with a dark fruit complexity that lingers on the palate. This isn't just a fruit cocktail; it’s a showcase of how we turn "off cuts" into world-class spirits.
The Serve: The Bramble is best enjoyed over crushed ice. Pour 100ml into a rocks glass packed with ice. Stir gently to chill, then garnish with two fresh blackberries and a slice of lemon. For the "Bruce’s Bar" look, drizzle a tiny extra drop of the liqueur over the top to create that signature marble effect.

What makes Gin 17•09 special in this cocktail?
Most gins are made from neutral grain spirit. Our Gin 17•09 is made using the "Off Cuts" from our rum distillation. This gives the gin a unique, slightly richer mouthfeel and a complex botanical profile (including sarsaparilla root) that pairs perfectly with dark berries.
Do I need to shake this cocktail?
The Bramble is traditionally "built" or stirred in the glass, but for the best texture at home, we recommend a quick shake with ice or a very vigorous stir over crushed ice to get it as cold as possible.
Why is there a lemon and sugar balance?
The "Sour" base (lemon and sugar) is what makes the Bramble so drinkable. It cuts through the sweetness of the blackberry liqueur and the strength of the gin, creating a refreshing, zesty balance.
