Commonly treated as a simple mojito-gin hybrid, our Southside is a technical exercise in botanical depth. We’ve stripped away the fluff to focus on the spirit. At its core is our Gin 17•09, crafted from the "Off Cuts" (the heads and tails) of our scratch-made rum. These cuts are re-distilled with sarsaparilla root and fresh orange peel to provide an earthy, complex, and oily backbone that mass-produced gins simply can't match. We meticulously blend this with clarified lime juice and just enough sugar syrup to achieve a precise, crisp balance. It’s a clean, punchy, and incredibly sophisticated refresher designed for the Palate Purist.
Chef’s Serve: To bring this cocktail to life, shake 100ml of the Southside blend vigorously with ice and a few sprigs of fresh mint. Double strain into a chilled coupe or Nick & Nora glass. The shaking process infuses the fresh mint oils directly into the spirit for a bright, aromatic finish.

Why do I need to add fresh mint if the cocktail is pre-mixed?
To maintain our Culinary Precision, we don’t use synthetic mint extracts or "natural" flavourings that fade over time. By shaking the blend with fresh mint sprigs yourself, you’re releasing the volatile oils from the leaves at the exact moment of service. This ensures a bright, aromatic punch that a bottled extract simply can't replicate.
What is "Clarified" lime juice and why do you use it?
Through our Restaurateur Lens, we aim for a cocktail that is as visually clean as it is sharp. Clarification removes the solids from the lime juice, preventing the drink from looking cloudy or gritty while preserving the bright, zesty acidity needed to balance the botanicals.
How long will the bottle last once opened?
Because we use real citrus and no artificial preservatives, we recommend keeping your Southside in the fridge once opened and consuming it within 4 weeks for peak freshness.
