The Story
This is the one that started everything. I spent years cooking with rums that tasted of nothing, so I sourced raw molasses, built a still, and started from scratch in Fenny Stratford. The Pineapple took eight batches to get right. I roast fresh pineapples over charcoal, brush them with a burnt-sugar caramel made with pineapple juice, then chop and steep for a week before straining into the base spirit. It picked up two Great Taste Award stars in its second year. I've never had a return on a bottle.
How it's made
The Pineapple expression is built on top of the base rum. I roast whole fresh pineapples over charcoal, baste them with a hand-made caramel of burnt sugar and fresh pineapple juice until they're golden and sticky, then steep the chopped fruit in the spirit for a week before straining. That's it. No shortcuts. Same obsession with ingredients I had in the kitchen — different equipment.
Why it's different
This is the entry point of the range — bright and immediately
approachable, where the Dark Spiced is what people graduate to. If the Dark Spiced is the rum people come back for, the Pineapple is the one that gets them through the door.

The process
I start with raw molasses — the same base ingredient used to make Caribbean rum, fermented from scratch here in Fenny Stratford. No bought-in base spirit. No concentrate. The molasses ferments for 14 days, creating a wash I then double-distil through our modern, stainless steel pot still.
