The Story
The quietest rum in the range — and the one that surprises people most. I take fresh tangerine zest and turn it into a handmade caramel, then blend it with a second spiced rum made from the spent spices left over from the Spiced Rum — nothing wasted, everything used twice. It's not trying to be the loudest bottle in the lineup, just the most balanced.
How it's made
I infuse fresh tangerine zest into the base rum, then turn that zest into a caramel by hand. Rather than throw away the spices used in the Spiced Rum once they've done their job, I run them again into a second batch of rum and blend that in too — so nothing gets wasted.
The result has the citrus upfront but finishes like marmalade — rich, rounded, more complex than a rum this approachable has any right to be,
Why it's different
Quieter than the Pineapple, less intense than the Dark Spiced — built for anyone who wants citrus without the Pineapple's sweetness or the Dark Spiced's depth. It sits in its own space in the middle of the range, and most people don't expect that until they try it.

The process
I start with raw molasses — the same base ingredient used to make Caribbean rum, fermented from scratch here in Fenny Stratford. No bought-in base spirit. No concentrate. The molasses ferments for 14 days, creating a wash I then double-distil through our modern, stainless steel pot still.
