The Three Counties Mai Tai

At Bruce’s Distillery Bar, we don't believe in "house pours." We believe in flavor architecture.

The Mai Tai is arguably the most famous rum cocktail in the world, but it is often misunderstood—buried under layers of cheap juice and synthetic syrups. When I set out to create the signature version for our bar in Milton Keynes, I wanted to strip away the fluff and showcase the versatility of our Landlocked English Rums.

The result is our most ordered drink. It’s a four-rum heavyweight that balances bright citrus, nutty sweetness, and deep, "Dunder" funk.

Here is how we build it.


The Ingredient List

  • 25ml Landlocked English White Rum: Our clean, double-distilled molasses base.

  • 25ml Landlocked English Spiced Rum: For those signature notes of Tonka and citrus.

  • 10ml Landlocked English Tangerine Rum: The "secret weapon" that replaces standard orange curaçao with deep, caramelized fruit.

  • 25ml Fresh Lime Juice: It must be fresh.

  • 12.5ml Orgeat: A high-quality almond syrup for that essential marzipan finish.

  • 10ml Sugar Syrup: Just enough to balance the lime.

  • 1 Dash Angostura Bitters: For aromatic depth.

  • Float: Landlocked English Dark Spiced Rum: The final, funky layer.


The Method: A Chef’s Approach

In the kitchen, "Mise-en-place" is everything. Behind the bar, the technique is just as vital as the spirit.

  1. The Mix: Combine the White, Spiced, and Tangerine rums with your lime juice, orgeat, sugar, and bitters in a mixing tin or glass.

  2. The Chill: Stir the ingredients with cubed ice. We stir rather than shake here to control the dilution and keep the texture silky.

  3. The Build: Fill a heavy rocks glass with crushed ice. This is crucial—the surface area of crushed ice keeps the drink incredibly cold and allows the "float" to sit properly.

  4. The Pour: Strain your mixture over the crushed ice.

  5. The Signature Float: Gently pour your Landlocked Dark Spiced Rum over the back of a spoon onto the top of the drink.

Why This Works

By using our Tangerine Rum, we introduce a cooked, marmalade-like complexity that cuts through the almond sweetness. The Dark Spiced float isn't just for looks; as you sip the drink, the "second-use" spice notes and the dunder-rich base slowly bleed into the lighter rums, meaning the cocktail actually evolves and gets deeper as you finish it.

The secret to this drink isn't the technique—it's the spirits. Most commercial rums are too thin to stand up to lime and orgeat. Our Landlocked range is distilled from scratch to have the "meat on the bones" required for high-end mixology.
